I love to eat healthy, but I don’t love to cook. I’m more of an “asssembler” of healthy ingredients. I quickly assemble g a variety of fruit, nut, and meat combinations for delicious, healthy meals. And making my own dressing is simple: take some olive oil, add a little vinegar (I like the flavored vinegars), and a dash of spice. Just make sure to check the spice label to be sure it doesn’t have any hidden sugar.

Chicken, Strawberry, and Jalapeño Salad

Ingredients
Spicy-Sweet Chicken Salad
- 2 cup Romaine Lettuce
- 3 oz Cooked Chicken (cilantro-lime, lemon pepper, or orange chicken are great choices)
- 1/8 cup Silced Almonds
- 2-3 Strawberries sliced
- 1 Jalapeño sliced
Dressing
- 1 tbsp Olive Oil
- 1 tsp Red Wine Vinegar or add to taste
- Generous dash Italian seasoning
